This extra virgin oil is produced in a very small quantity and only in the best harvests. It is pressed from the Rasara and Moraiolo varieties grown in our orchards in Arqua Petrarca. Early picking and the rapid extraction of oil allows us to produce an oil with unique characteristics. It has very low acidity, a distinct fresh artichoke-like aroma, with a medium fruity character and a delightful pungency. It is excellent on grilled vegetables and on hearty bean soups.
